Roasted Butternut Squash & Spinach
Sliced almonds add crunch to this this delicious slightly spiced vegetable side dish.
- Heat the oven to 425 degrees F. On a large rimmed baking sheet, toss the butternut squash with 2 tablespoons oil and 1/2 teaspoon each salt and pepper. Roast for 20 minutes.
- Meanwhile, in a small bowl, toss the almonds with the remaining teaspoon oil, then the cinnamon and cayenne. Scatter the almonds over the squash and continue roasting until the almonds are golden brown and the squash is tender, about 5 minutes more.
- Scatter the spinach over the squash and almonds and let sit for 1 minute, then gently fold togeth
Asparagus & Parmesan Salad with Raisins
1 bunch asparagus, trimmed and shaved or thinly sliced lengthwise
2 tbsp. olive oil
1 tbsp. plus 1 teaspoon, fresh lemon juice
3 tbsp. toasted pine nuts
3 tbsp. golden raisins
1 oz. Parmesan, shaved (about 1/4 cup)
Kosher salt and freshly ground black pepper
Arrange asparagus on a platter. Drizzle with oil and lemon juice. Let stand 10 minutes. Top with pine nuts, raisins, and Parmesan. Season with salt and pepper.
Serve this refreshing salad with ribbons of shaved asparagus and Parmesan cheese that’s simply dressed in lemon juice and olive oil for the ultimate spring starter.
CHICKEN STUFFED PEPPERS
1lb boneless skinless chicken breast or thighs,cut 1/4 inch cubes
1 pint grape tomatoes,cut in half
2 cups cooked brown rice
2 tablespoons all-purpose flour
2 spoons Organic Red Wine Vinegar
2 tablespoon Organic Extra Virgin Olive Oil
2 teaspoon lemon juice
2 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/8 teaspoon sugar
4 bell peppers
1 cup crumbled feta cheese,divided
1. In a large bowl mix chicken,cooked rice,tomatoes and flour
2. In a separate bowl mix together red wine, extra virgin olive oil, lemon juice, oregano, salt, garlic powder, black pepper, and sugar
3. Add vinegar mixture and 1/2 cup of the feta to chicken and stir
4. cut bell peppers in half remove seeds and stem
5.Place peppers in baking pan fill the peppers with chicken mixture
6. Bake for 35-40 minutes making sure chicken is cooked though to at least 165f
use an instant-read thermometer to check
7.top with remaining feta and serve
